Peppermint after-dinner biscuits confer a lift to black currant, root spice and black plum notes, all strewn with dried sage. Cabernet’s code of tannic austerity is in full force, harnessing the phalanx of fruit into a compact, well defined whole.

This has a surprisingly restrained aroma in the context of the range. Dark plum, liquorice root and vanillin oak are all present. The tannins assuage in a dusty, pliant manner. Round and straightforward.

Summerfield’s calling card is sumptuous fruit across the range, bridled by massaged tannins and well applied structural supports. The approach serves to furl the region’s predilection for ripeness and dry extract into a compact ball of power, albeit, eminent drinkability and an uncanny freshness. The wines almost feel lighter than they really are. This is no mean feat! Violet, blue fruits and vanilla cream, a clang of pepper and a finish of smoked baby back ribs…what’s not to like?

A savoury meld of what winemaker Mark Summerfield believes to be the best performers in the Pyrenees: shiraz, merlot and cabernet sauvignon. The blend is 57%, 34% and 9% respectively. Palpably mid-weighted rather than full, a sashay of dark fruits is given lift by a hint of mint; tone by detailed grape tannins and oak stained with bitter chocolate, cedar and coffee beans.

This adds an extra dimension to the regular Cabernet bottling by route of optimum quality fruit, abstemiously selected across the best plots. Cassis, blueberry, dark plum, anise and verdant herbs are underlain by a gauntlet of precise grape tannins. Coffee mocha vanillin oak imparts a generous creaminess to the wine, belying its strait-laced, gun barrel austerity.

This preens the regular Shiraz’s mane with added flare, giving greater gusto to the intensity of the fruit and the oak applied. Sourced from the original 70s plantings, there is an additional element of spice, too: clove and cardamom. Betel leaf and anise ply their intrigue across a kaleidoscope of dark fruit flavours, blue and black all. The finish is penetrating and long, driving across the mouth and down the throat. Cola and barbeque notes linger. Nothing is out of place.

From an original 46yo plot, this is all molten black fruits on one hand; a savoury melody of clove, worn leather, anise, cardamom, bitter chocolate and bay leaf, on the other. Fragrant and of multitudinous layers, each revealing itself with time in the glass. Poised. The tannins are substantial on the back end, suggesting that this augers very well for a long time in the cellar.

This is a single vineyard, single block wine, showcasing Summerfield’s salubrious fruit massaged by the estate’s indelible stamp of impeccably hewn tannins. A floral nose of lilac and musk leads one astray into a richly endowed nether of dark cherries and plum, basted with five-spice, anise and cinnamon. The American oak is buried beneath the avalanche of fruit. A wine of immense force, yet paradoxically, a wine that is light on its feet.
